Kentucky Chicken

  • 4 Chicken Breasts, boneless w/skin
  • 1/4 cup(s) Flour
  • 2 Tbsp(s) Olive Oil
  • 2 Tbsp(s) Butter
  • 1 medium Shallots, diced
  • 8 oz(s) Button Mushrooms, sliced
  • 1/2 cup(s) Bourbon
  • 1 1/2 cup(s) Heavy Cream, can use some milk
  • 10 oz(s) Baby Spinach
  • 2 Tbsp(s) Thyme, fresh chopped
  • 1/2 tsp(s) Black Pepper, ground
  • 5 large Potatoes
  • 1/2 cup(s) Milk
  • 2 Tbsp(s) Butter
  • Salt & Pepper to taste

Kentucky Chicken Directions

  1. Heat oil over med-high heat. Coat the chicken in flour. Saute the chicken until the crust is golden brown, about 4 minutes. Set-aside.
  2. Melt butter and saute the shallots for about a minute. Add the mushrooms and saute for another minute.
  3. Remove from heat and add the Bourbon. Return to heat and add cream, spinach, thyme, and pepper. Bring to a simmer for 2 minutes.
  4. Add chicken back to the Bourbon cream sauce and bring to a high-simmer for 5 minutes.
  5. Salt and serve on rice or mashed potatoes.
