1 ea Egg White
1 Tbsp(s) Water
1 cup(s) Pecan Halves
1.25 cup(s) Pecans, Chopped
0.5 cup(s) Sugar
0.25 tsp(s) Salt
1.5 tsp(s) Cinnamon, ground

Christmas Crack (Cinnamon Roasted Pecans) Directions

  1. Preheat the oven to 225º F.
  2. Lightly spray oil on a rimmed backing pan.
  3. Combine egg white and water in a mixing bowl. With an electric mixer, beat until the white are shiny and fluffy.
  4. Fold the whipped egg white into the pecans. Keep folding until all the pecans are fully coated.
  5. Combine the sugar, cinnamon and salt. Slowly fold the mixture into the pecans until evenly coated.
  6. Evenly spread the nuts over the oiled baking pan.
  7. Bake for 1 hour, stirring every 15 minutes. After the first 15 minutes the pecans will be gooey. Each consecutive 15 minutes the mixture will get thicker and carmalize to the pecans. The pecans are ready for the cooling rack when the sugars are dry and carmelized.
  8. Remove to a cooling rack. Once cooled store in an airtight container.
