Old Fashioned Baking Powder Biscuits and Shortcakes Directions
- In all the recipes below, the amount of baking powder indicated is correct when using either a tartrate or phosphate baking powder. When using an aluminum baking powder use half the amount specified. Biscuits: Cut shortening into sifted dry ingredients. Add liquid to make a soft dough. Roll lightly or pat into a sheet about 1/2 to 1 inch thick. Cut into rounds and place on a greased baking sheet. Bake in a hot oven of 450 F for 12-15 minutes. Cheese Biscuits: Add 1/2 cup of grated cheese with shortening or sprinkle on top. Fruit or Nut Biscuits: Add 3/4 cup of currants, raisins, figs, preserved ginger, candied cherries or nuts before adding liquid. Tops of biscuits may be sprinkled with brown sugar and cinnamon or nutmeg. Orange Biscuits: Dip sugar cubes in orange juice, moistening thoroughly. Place 1 on each biscuit before baking. Sprinkle with grated orange rind. Peanut Butter Biscuits: 1/4 cup of peanut butter used as the shortening. Pin Wheel Biscuits: 2 tsp melted butter, 1/4 cup sugar 2 tsp of nutmeg or cinnamon. Roll dough into a rectangular sheet 1/4 inch thick. Brush with melted butter
