10 oz All-Purpose Flour
2 whole Eggs, white and yokes
4 ea Egg Yokes
0.5 tsp Kosher Salt
6 oz Fresh Baby Spinach

    In a microwave bowl, microwave the spinach until wilted. Drain as much water as you can. Let it cool and repeat. Once cooled, hand squeeze as much water out of the spinach as you can. Put the eggs, egg yokes, salt and spinach in a food processer or blender. Process until the spinach is blended in. add the contents of the blender to the mix bowl and pour in the egg mix. Using the solid paddle mix on 2 for about 30 seconds. Wipe down the paddle and install the dough hook. Knead on 2 for about 2 minutes. Dust the counter with flour and knead the dough by hand for about 4 minutes. Cover the dough ball with plastic wrap and allow it to rest for about 30 minutes. When it springs back when pressed, cut it into 4 pieces. Remove 1 quarter and recover the remaining dough with plastic. Feed the dough through the rollers set on 2 with speed 2. Dust with flour, fold in thirds or the size of the roller throat and feed it through again. repeat about 3 times. Hang the finished sheet or lay it flat on a flour dusted counter. Repeat with the remaining 3/4 of the dough, 1 quarter at a time. Install the fettucine cutter and feed each sheet through. Hang the cut pasta to dry, or make nests by rolling around your hand. Put in a sealed container and refrigerate until ready for use.
