4 Chicken Breasts, boneless w/skin |
0.25 cup(s) Flour |
2 Tbsp(s) Olive Oil |
2 Tbsp(s) Butter |
1 medium Shallots, diced |
8 oz(s) Button Mushrooms, sliced |
0.5 cup(s) Bourbon |
1.5 cup(s) Heavy Cream, can use some milk |
10 oz(s) Baby Spinach |
2 Tbsp(s) Thyme, fresh chopped |
0.5 tsp(s) Black Pepper, ground |
5 large Potatoes |
0.5 cup(s) Milk |
2 Tbsp(s) Butter |
Salt & Pepper to taste |
Kentucky Chicken Directions
- Heat oil over med-high heat. Coat the chicken in flour. Saute the chicken until the crust is golden brown, about 4 minutes. Set-aside.
- Melt butter and saute the shallots for about a minute. Add the mushrooms and saute for another minute.
- Remove from heat and add the Bourbon. Return to heat and add cream, spinach, thyme, and pepper. Bring to a simmer for 2 minutes.
- Add chicken back to the Bourbon cream sauce and bring to a high-simmer for 5 minutes.
- Salt and serve on rice or mashed potatoes.
