| 1 bunch Beet Greens |
| 1 Tbsp(s) Olive Oil |
| 2 cloves Garlic, minced |
| 2 Tbsp(s) Onion, diced |
| 0.25 tsp(s) Red Pepper Flakes |
| 4 Lemon Wedges |
| Salt and Pepper to taste |
Beet Greens Directions
- Remove the stems and wash each leaf. Stack them and cut into 1 1/2" strips.
- Bring a pot of lightly salted water to a boil. Add the beet greens and cook until tender, about 2 minutes. Drain in a colander and run cold water over them to stop the cooking.
- In a large skillet heat the olive oil on medium. Saute the garlic, onion and red pepper flakes. Cook until fragrant, about 1 minute. Add the greens and mix well. Heat only until warmed.
- Serve with lemon wedges
